- 1 1/2 pounds turkey
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 3 cloves of garlic, finely chopped
- 1 1/2 teaspoons ground cumin
- 1 teaspoon of pepper powder
- 1/2 teaspoon sea salt or Himalayan salt
- 1/4 teaspoon cayenne pepper
- I used 2 cans of black beans, pinto beans
- 1 natural tomato, sliced, no added sugar
- 12 sprigs fresh coriander, finely chopped (for garnish)

- Heat the oil in a large pot over medium heat.
- add turkey, onion, pepper and garlic; cook, stirring occasionally, 5 to 8 minutes or until turkey is no longer pink.
